With its on-site farm, the food at La Provence Restaurant in Lacombe has to travel feet, not miles, from farm to table.
The restaurant is routed in both French and American food tradition. Chris Kerageorgiou, the original chef and owner, was born in Port Saint Louis, a small village in Provence, France. He moved to the Untied States soon after World War II and over the next 25 years, worked as a baker, cook, waiter and maitre d’ at different restaurants before opening La Provence in Lacombe in 1972. He created the ambiance of a French country inn and served a cuisine to match.
In January 2007, Kerageorgiou sold the restaurant to John Besh, who had once served as his chef de cuisine. As all great chefs know, fresh, taste-filled food comes from extremely fresh ingredients. To that end, Besh has given this great restaurant an upgrade of sorts by adding an adjacent, on-site farm. We can only imagine how wonderful the food will be now. Eating Local never tasted so good!
